I have been sick with strep and some sort of cold, but I finally got around to trying this out today.  The egg mold   didn't work that great, but I read that I needed to use large or extra large eggs, and this egg was rather small.  Other than that, I am quite pleased. I cut the ham and cheese slices with some vegetable cutters I bought   here  and a turtle-shaped Playdough cutter from our Playdough box.  The faux grass was bought  here . It is served in a Dr. Sears Nibble Tray from  here . PS -- The egg mold instructions can be found  here.

Wouldn't you know it?

Little Ben is still awake.   I hear a little kiss when I walk by his room, so I return the audible kiss.  Poor thing.  So, I am still awake -- waiting to turn the hall light off. So, I thought I would take a moment to explain my new meal plan .  I am hoping this will help make the days go more smoothly. I have a 4x6 index file box with dividers and index cards.  On each divider is written a category; my categories are : soups and stews sandwiches breakfast Italian casseroles Mexican beef chicken fish miscellaneous On a card, I write a dinner idea.  Many are pretty simple -- like beef/veggie soup with grilled cheese and salad.  I don't have anything listed that I've never tried.  I am personally tired of feeling guilty because I don't come up with new things.  Instead, I am going to have a container full of ideas, and I can try something when I feel like it. Amazing Gluten-Free Chocolate Cake

A Yummy Smoothie

Blend together: 1 cup unsweetened chocolate almond beverage http://www.bluediamond.com/shop/natural/almondBreeze32.cfm 1 cup frozen wild blueberries 1 ripe banana 1.5 cup fresh spinach (large handful -- stems and all) 1 tbsp flax seed This 300 calorie smoothie is packed with nutrients and antioxidants ! ** for added nutrients and protein, you can use cow's milk, protein powder, wheat germ or oats run through the food processor. I'm aiming to keep my low in carbs and calories, though.

I wanted to share a favorite recipe here

My family just loves this. Quick-cook one cup black beans (this will yield more than one cup. I just boil, simmer and wait until done.) (dry is cheaper than canned, but canned would work.) 1 large jar generic picante sauce 1 small bag frozen corn (I found it for 78 cents at Kroger) 1 onion (I run mine through food processor) about 1 pound cooked ground beef (I buy mine in bulk, cook it all at once, freeze in approx. 1 pound ziploc bags for quick meals). You could of course omit the beef for vegetarian. any canned diced tomatoes you have. (I freeze whatever I don't use from one meal, so I usually have some in my freezer to use) you can also add any chopped peppers (I freeze any we don't eat in time. This makes them easy to chop.) salt, garlic or garlic powder, cumin, chili powder. I just add to taste. Bake in 350 degree oven. ***************************** Cook rice.
